Wow! Amazing, huh? Now even better news...there's so many ways to enjoy it. One of my favorites is making it into "rice". Traditional rice really isn't all that great for you...so here's an alternative.
Ingredients:
1 Head of Cauliflower
1 cup peas and shredded carrots (I purchase a frozen pea and shredded carrot mix)
2 tbsp Coconut Oil
1/3 cup chopped yellow onion
Salt and pepper to taste!
*Please note, I always buy organic ingredients
Directions:
Wash and chop up that head of cauliflower. (I usually make them into florets.) Next, put your cauliflower florets into a food processor. Chop and puree until the cauliflower looks like "rice".
If you are using a frozen pea and carrot mixture:
In a large pan or wok, add 1 tbsp coconut oil and sauté peas and carrots for about 3 minutes. Next, add in your onion and cauliflower "rice" and the other tbsp of coconut oil.
If you are NOT using a frozen pea and carrot mixture:
In a large pan or wok, add 1 tbsp coconut oil and chopped onion. Sauté for a few minutes then add your peas, carrots, and cauliflower rice.
Sauté the mixture until steamy-hot and tender, could take up to 10 minutes depending on heat. Add more coconut oil is desired or if mixture is getting dry. Season with your salt and pepper!
