Mother's Day Morning Crepes

Tomorrow is Mother's Day! Avoid the wait at a breakfast joint; celebrate Mom by cooking her a quick, easy, and most importantly, delicious breakfast! Crepes! 

Two different Crepe Recipes and ideas for fillings!

Basic Crepes:

Ingredients:

2 Cups Flour
½ tsp Salt
1 cup Milk
1 cup Water
4 Eggs
4 tbsp butter, melted

Directions:

Whisk together flour and eggs. Gradually add the milk and water while stirring the batter. Add your salt and butter. Whisk until batter is nice and smooth.
Oil or butter a heated pan (I use Coconut Oil), and spoon some batter onto the pan. ¼ cup of batter per crepe (the less batter, the smaller and thinner the crepe.) Tilt your pan with circular motions to spread the batter and form a thin, "crepe shape."
Cook over medium heat, cooking for appox. 2 minutes each side, or until Crepe is lightly browned.

Serving size about 8 crepes.

*Please note, to make this recipe a little "healthier", you can use organic ingredients, cage-free eggs, & almond milk instead of milk.

Coconut Flour Crepes

Ingredients:

2 tbsp Coconut Flour
4 Eggs (large)
1 tbsp Coconut Oil, melted over very low heat
½ cup Water
2 tbsp coconut oil, for cooking

Directions:

In a food processor, pulse together coconut flour and eggs. Add 1 tbsp of coconut oil and water and pulse until thoroughly combined.
Heat 1 tsp of the coconut oil in an 8-inch skillet over medium-low heat. Scoop ¼ cup of the batter onto the skillet to spread the batter to the edges of the pan.
Cook until small bubbles form and burst on the surface of the crepe, then flip and cook the other side, 4 to 5 minutes total.
Transfer the crepe to a plate.
Repeat the process with the remaining oil and batter, then serve!

Ideas for Filling/Toppings:

  • "Nutella" (Or an organic hazelnut-chocolate spread)
  • Peanut Butter
  • Banana
  • Strawberry-Banana
  • All fruit: Strawberry, Raspberry, Blueberry, Banana
  • Maple Syrup
  • Lemon and Sugar (Or stevia, sugar alternative) ~My favorite!
